ÖZETBu çalışmada, levrek ve gökkuşağı alabalık filetolarından alternatif bir ürün olarak deneysel balık salamı üretilmiştir. Balık eti kıyma haline getirilmiş ve içerikler uygun oranlarda eklenmiş, akabinde salam hamuru sentetik salam kılıfına doldurulmuştur. Salamlar buzdolabı koşullarında (4 ± 2 ºC) 5 ay boyunca depolanıp analiz edilmiştir.Salamların raf ömrünü belirlemek için kimyasal ve mikrobiyolojik analizler gerçekleştirilmiştir.
