In this thesis the development of Afghanistan’s banking system and the role of domestic banks in the economy of Afghanistan has been researched. Moreover, the effects of banks and the banking system to business sector, financial sector and to private sector in the country have been handled. Slow food and food tourism: Foça earth market case study

Destinations are most attractive for the tourists with their unique cultural elements and food is a substantial amount of the unique local identity. Therefore, food tourism has always been a very important aspect of the destination and tourists have always been eager to try unique tastes of the culinary culture in the destination they are visiting. In this thesis study, the concepts of food tourism and food tourists are explained in detail and their importance in the context of destinations is mentioned with concrete reasons. On the other hand, the industrial revolution, which took place recently, created today's highly inte . . .grated and typical global markets. This rapid change also forced people around the world to have a typical life style with common interests, hobbies and tastes. This standardization and singularity affected nations’ culinary culture and created monotype, relatively tasteless and “fast” food. As a result, the culinary cultures of different places started to dissolve. This was a reflection of the globalized and similarized world and it made an impact on the food cultures of communities, even exposing them to the danger of perishing. This problem necessitated a comprehensive movement to protect the unique food cultures of nations, as they are a significant part of the destinations’ identities. Slow Food movement was born in the 1980’s as an answer to this progress and became a major influence for countries. Starting in Italy, Slow Food is a highly recognized, almost brand-like, organization and movement around the world today. It has strict regulations and the main aim of this organization is to protect the cultural food heritage besides ensuring a healthy agricultural production. The basic principles of this movement, such as good, clean and fair food, and the brief history of the organization are explained thoroughly in this thesis study. viii Being an active Slow Food point and carrying out the regulations and principles of Slow Food create a certain attraction for destinations. The main reason behind this is that Slow Food is a worldwide-recognized organization and it creates an attraction point for green tourists, food tourists and ordinary tourists with its support to sustainable local production besides offering cultural experiences, providing ethical tourism mobility and protecting the local identity. This study also discusses the effects of Slow Food on the destination’s food culture and food production as well as the touristic attraction it creates in the context of food tourism. For this purpose, Earth Markets, which are solid applications of Slow Food, are investigated in this thesis and through the case study of Foça Earth Market. Foça is a seaside town in Turkey near Izmir and it is a major touristic destination. Therefore, the Earth Market in Foça is a perfect example for investigating the effects of Slow Food principles on a destination. The thesis' objective is to show how the application of Earth Markets create an attraction and at the same time protects both the local producers and the local values of the destination in order to obtain a balanced result for the touristic activities, sustainability and economic benefits. The research about Foça Earth Market was conducted face-to-face in the market area as structured interviews, semi-structured interviews and on-site observations. The collected data were then evaluated by the help of qualitative research techniques and the results were explained thoroughly. According to the research results, Slow Food’s regulations are followed in Foça Earth Market and therefore, it helps to protect the local identity and products. Also, since Slow Food is a well known brand it adds to the image of the destination and it is observed that it has an important role for destination attractiveness in the context of food tourism. ÖZETDestinasyonlar artan rekabet koşulları içinde üstünlüğü sağlamak için markalaşma yoluna gitmektedirler. Bu süreçte en sık ihtiyaç duyulan şey, markalaşma sürecine giren destinasyonun ön plana çıkartacağı yerel, kültürel ve turistik değerlerdir. Türkiye'de geleneksel özellikler taşıyan ve yerel ve kültürel birtakım değerleri yaşatmak ve tanıtmak için farklı temalarda birçok festival düzenlenmektedir. Daha sonra Türkiye'nin tarihi, kültürel ve turistik değerlere sahip önemli destinasyonları arasında yer alan Denizli ili ve ilçelerinde uzun yıllardan beri düzenlenmekte olan yerel yiyecek festivallerinin organizatörleri ve yerel paydaşlarla derinlemesine görüşmeler gerçekleştirilmiştir. İçerik analizi ile festival organizatörlerinin ve yerel paydaşların, ilçelerinde düzenledikleri yiyecek festivallerinin durumu, özellikleri ve destinasyon markalaşmasındaki rolü ile ilgili veriler elde edilmiştir. Bu analizler sonucunda Denizli ili ilçelerinde uzun yıllardan beri devam etmekte olan 5 yerel yiyecek festivalinin destinasyon markalaşmasındaki rolüne ilişkin bulgular ortaya konmuştur. Araştırmada elde edilen sonuçlardan biri olarak ulusal alanda yiyecek festivalleri veya destinasyon markalaşmasında yiyecek festivalleri başlıklı çalışmanın olmamasıdır. Nitel araştırma ile elde edilen bulgular sonucunda ise Denizli ili ilçelerinde düzenlenen yerel yemek festivallerinin destinasyon markalaşmasında rolü olmadığı saptanmıştır. Çalışmada bu bulgulara ilişkin değerlendirmeler yapılmış ve öneriler sunulmuştur.ABSTRACTIt prefers branding to gain superiority in the increasingly competitive conditions of destinations. What is most frequently needed in this process is the local, cultural and touristic values that the destination entering the branding process will bring to the fore. In Turkey, many festivals with different themes are organized in order to keep alive and promote some traditional, local and cultural values. Local food festivals, which have an important place among these festivals, provide an economic contribution to the destination. Local food festivals are thought to attract tourists and contribute to destination branding by covering the process of harvesting, cooking and preparing the local products. The scope of the research is to examine the role of local food festivals in the districts of Denizli in destination branding. For this purpose, firstly, the fields of studies on food festivals in the tourism literature were tried to be determined by using the bibliometric analysis technique in order to reveal the originality of the research. Afterwards, in-depth interviews were held with local food festivals, organizers and local stakeholders in Denizli province districts, which are among the important destinations with historical, cultural and touristic values in Turkey. With the content analysis, data were obtained about the status, characteristics and role of the destination branding of the food festivals organized by the festival organizers and local stakeholders in their districts. As a result of these analyzes, the findings regarding the role of the 5 local food festivals that have been going on for many years in the districts of Denizli province in the destination branding have been revealed. One of the results obtained in the research is that there is no study titled food festivals or food festivals in the national area in destination branding. As a result of the findings obtained as a result of the qualitative research, it was determined that the local food festivals held in the districts of Denizli province do not have a role in destination branding. ÖZETBu çalışma, Türkiye’deki ülkesel ve bölgesel, eylemli turist rehberlerinin algıladıkları iş stresi faktörlerini ve uyguladıkları başetme yöntemlerini belirlemeyi amaçlamıştır. Bununla birlikte, bireysel farklılıkların ve iş yapısının, algılanan iş stresi faktörlerini ve seçilen başetme yöntemlerini etkileyip etkilemediği incelenmiştir. Toplamda 395 turist rehberi araştırmaya dahil edilip iş stresi kaynakları ve başetme yöntemlerini değerlendiren anket formunu doldurmaları istenmiştir. In this context, tour guides who are regarded as one of the representatives of countries and tourism destinations and one of the most important front-line staff in tourism industry play significant role on tourist satisfaction and re-visit intention. Tour guides who provide idea and information to tourists about community and country via their attitudes, behaviors, skills and knowledge level and represent themselves, their colleagues, travel agencies/tour operators, their countries and countries’ people to tourists are accepted as the staff group having most significant responsibility. No matter how many guide books and how much information that tourists making a visit to any country have, they need tour guides as they do not know the language, culture and traditions of the country. Irrespective of the volume of information tourists might have when visiting a country, the need for a tour guide plays a crucial role on interpreting the authenticity, language, culture and traditions of the country. Thus making the tourists’ experience an unforgettable one. The purpose of this research is to determine the impact the tour guide service in Istanbul has on tourist satisfaction level and what extent this attracts repetitive visits to the city. This research is made up of three chapters. In the first chapter, the concepts of tour guiding profession and tour guide are examined in a detailed way and the characteristics that tour guides should have are investigated by analyzing the concept of tour guides. In today’s highly competitive business environment, employees are expected to display positive attitudes and emotions as it affects the service quality and volume of business of a company. In hospitality industry, where customer employee encounter is occured intensely, comprehension of emotional labor is significant as it is directly related with employees’ well being and performance. Emotional labor is defined as employee’s ability to conform their outward behavior to display the appropriate emotions for a wage and the job nature of tour leaders demand a high degree of emotional labor. Tour guiding is considered to be one of the mo . . .st attractive jobs by many people but it is not the case in real life for them being front-line employees who are in face-to-face interaction with customers all the time. Most of the time they have to examine the group’s expectations and behave in a manner to match these expectations to complete the tour with satisfied guests.
